Description

A classic Southern comfort food dish, Shrimp and Grits features tender shrimp simmered in a savory sauce served over creamy, cheesy grits. It’s a perfect meal for brunch, lunch, or a satisfying dinner.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup stone-ground grits
  • 4 cups milk
  • 2 cups water
  • 1/2 cup grated sharp cheddar cheese
  • 1/4 cup butter
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1/4 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped smoked sausage (optional)
  • 1/4 cup dry white wine (optional)
  • Salt and freshly ground black pepper to taste


Instructions

  1. Cook the grits according to package directions, using milk and water. Stir in cheese and butter until smooth. Season with salt and pepper.
  2. While the grits are cooking, season the shrimp with salt and pepper.
  3. In a large skillet, melt butter over medium heat. Add onion and bell pepper, and cook until softened, about 5 minutes.
  4. Add garlic and cook for 1 minute more until fragrant. If using, add smoked sausage and cook for 2-3 minutes.
  5. Add the shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through.
  6. If using, deglaze the pan with white wine, scraping up any browned bits.
  7. Stir in parsley. Season the shrimp mixture with salt and pepper.
  8. Serve the shrimp mixture over the creamy grits.

Notes

  • For extra flavor, consider adding a pinch of cayenne pepper to the shrimp mixture.
  • You can substitute heavy cream for some of the milk for richer grits.
  • Bacon or pancetta can be used instead of smoked sausage.
  • A squeeze of lemon juice over the finished dish adds a bright finish.
