Ingredients
Scale
- 1 pound large shrimp, peeled and deveined
- 1 cup stone-ground grits
- 4 cups milk
- 2 cups water
- 1/2 cup grated sharp cheddar cheese
- 1/4 cup butter
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1/4 cup chopped onion
- 1/4 cup chopped green bell pepper
- 1/4 cup chopped smoked sausage (optional)
- 1/4 cup dry white wine (optional)
- Salt and freshly ground black pepper to taste
Instructions
- Cook the grits according to package directions, using milk and water. Stir in cheese and butter until smooth. Season with salt and pepper.
- While the grits are cooking, season the shrimp with salt and pepper.
- In a large skillet, melt butter over medium heat. Add onion and bell pepper, and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant. If using, add smoked sausage and cook for 2-3 minutes.
- Add the shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through.
- If using, deglaze the pan with white wine, scraping up any browned bits.
- Stir in parsley. Season the shrimp mixture with salt and pepper.
- Serve the shrimp mixture over the creamy grits.
Notes
- For extra flavor, consider adding a pinch of cayenne pepper to the shrimp mixture.
- You can substitute heavy cream for some of the milk for richer grits.
- Bacon or pancetta can be used instead of smoked sausage.
- A squeeze of lemon juice over the finished dish adds a bright finish.
