Instructions

  1. Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg for the muffin batter.
  3. In a separate medium bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the diced peaches.
  6. Prepare the streusel topping: In a small bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold butter using your fingertips or a pastry blender until the mixture resembles coarse crumbs.
  7. Divide the muffin batter evenly among the prepared muffin cups, filling each about two-thirds full.
  8. Sprinkle the streusel topping generously over the batter in each muffin cup.
  9. Bake for 20-25 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
