- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 large zucchini, cut into 1-inch chunks
- 1 red bell pepper, cut into 1-inch chunks
- 1 yellow bell pepper, cut into 1-inch chunks
- 1 red onion, cut into 1-inch chunks
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes.
- In a large bowl, combine the chicken, zucchini, bell peppers, and red onion.
- In a small bowl, whisk together the olive oil, lemon juice, oregano, basil, garlic powder, salt, and pepper.
- Pour the marinade over the chicken and vegetables and toss to coat evenly.
- Thread the marinated chicken and vegetables onto the skewers, alternating between chicken and different vegetables.
- Grill the skewers for 10-12 minutes, flipping occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
- Remove from grill and serve immediately.
Notes
- You can use any vegetables you like for these skewers, such as cherry tomatoes, mushrooms, or cherry tomatoes.
- Adjust the herbs and spices to your preference.
- For a spicier kick, add a pinch of red pepper flakes to the marinade.
