Quick and delicious grilled chicken and vegetable skewers infused with lemon and herbs, perfect for a fast weeknight meal.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 large zucchini, cut into 1-inch chunks
  • 1 red bell pepper, cut into 1-inch chunks
  • 1 yellow bell pepper, cut into 1-inch chunks
  • 1 red onion, cut into 1-inch chunks
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes.
  2. In a large bowl, combine the chicken, zucchini, bell peppers, and red onion.
  3. In a small bowl, whisk together the olive oil, lemon juice, oregano, basil, garlic powder, salt, and pepper.
  4. Pour the marinade over the chicken and vegetables and toss to coat evenly.
  5. Thread the marinated chicken and vegetables onto the skewers, alternating between chicken and different vegetables.
  6. Grill the skewers for 10-12 minutes, flipping occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
  7. Remove from grill and serve immediately.

Notes

  • You can use any vegetables you like for these skewers, such as cherry tomatoes, mushrooms, or cherry tomatoes.
  • Adjust the herbs and spices to your preference.
  • For a spicier kick, add a pinch of red pepper flakes to the marinade.
