- 1 medium head cauliflower, riced
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons melted butter
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Steam or microwave the riced cauliflower until tender. Drain any excess water thoroughly.
- In a bowl, combine the drained cauliflower, mozzarella cheese, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix well until a dough forms.
- Divide the dough into 6-8 portions and shape them into breadstick forms on the prepared baking sheet.
- Bake for 15-20 minutes, or until golden brown and firm.
- While the breadsticks are baking, melt the butter and stir in the chopped parsley.
- Once the breadsticks are out of the oven, brush them with the garlic-parsley butter.
- Serve warm and enjoy your keto-friendly breadsticks!
Notes
- Ensure cauliflower is very dry to prevent soggy breadsticks.
