- 1 pound potatoes, peeled and cubed

- 1/2 cup chicken broth
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Add ground turkey to the skillet. Break it up with a spoon and cook until browned, about 7-10 minutes.
- Drain any excess grease from the skillet.
- Add cubed potatoes, dried thyme, salt, and pepper to the skillet. Stir to combine.
- Pour in the chicken broth.
- Bring to a simmer, then cover the skillet and cook for 15-20 minutes, or until the potatoes are tender, stirring occasionally.
- Serve hot.
