A delightful twist on the classic Caprese salad, featuring sweet grilled peaches, creamy burrata, fresh basil, and a balsamic glaze.

- 2 ripe peaches, halved and pitted
- 8 ounces burrata cheese
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil leaves
- 2 tablespoons olive oil
- 2 tablespoons balsamic glaze
- Salt and freshly ground black pepper to taste
Instructions
- Preheat grill or grill pan to medium-high heat.
- Brush the cut sides of the peaches with a little olive oil.
- Grill the peaches for 3-4 minutes per side, or until slightly softened and grill marks appear.
- Arrange the grilled peach halves on a serving platter.
- Place the burrata cheese in the center of the platter.
- Scatter the cherry tomato halves and fresh basil leaves around the peaches and burrata.
- Drizzle with remaining olive oil and balsamic glaze.
- Season with salt and pepper to taste.
- Serve immediately.
Notes
- Choose ripe but firm peaches for grilling.
- You can substitute mozzarella for burrata if desired.
- Aged balsamic vinegar can be reduced to make a glaze if you don’t have any on hand.
