Description

A delightful twist on the classic Caprese salad, featuring sweet grilled peaches, creamy burrata, fresh basil, and a balsamic glaze.


Ingredients

  • 2 ripe peaches, halved and pitted
  • 8 ounces burrata cheese
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic glaze
  • Salt and freshly ground black pepper to taste


Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Brush the cut sides of the peaches with a little olive oil.
  3. Grill the peaches for 3-4 minutes per side, or until slightly softened and grill marks appear.
  4. Arrange the grilled peach halves on a serving platter.
  5. Place the burrata cheese in the center of the platter.
  6. Scatter the cherry tomato halves and fresh basil leaves around the peaches and burrata.
  7. Drizzle with remaining olive oil and balsamic glaze.
  8. Season with salt and pepper to taste.
  9. Serve immediately.

Notes

  • Choose ripe but firm peaches for grilling.
  • You can substitute mozzarella for burrata if desired.
  • Aged balsamic vinegar can be reduced to make a glaze if you don’t have any on hand.
