- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 2 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a medium bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, rosemary, salt, and pepper.
- Add the chicken cubes to the marinade, ensuring they are evenly coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours.
- Preheat your grill to medium-high heat.
- Thread the marinated chicken pieces onto the prepared skewers.
- Place the skewers on the preheated grill.
- Grill for about 4-6 minutes per side, or until the chicken is cooked through and has nice grill marks.
- Remove skewers from the grill and let them rest for a few minutes before serving.
