Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, rosemary, salt, and pepper.
  3. Add the chicken cubes to the marinade, ensuring they are evenly coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours.
  4. Preheat your grill to medium-high heat.
  5. Thread the marinated chicken pieces onto the prepared skewers.
  6. Place the skewers on the preheated grill.
  7. Grill for about 4-6 minutes per side, or until the chicken is cooked through and has nice grill marks.
  8. Remove skewers from the grill and let them rest for a few minutes before serving.

Notes

  • Serve with a side salad or grilled vegetables for a complete meal.
  • You can add colorful bell peppers or onions to the skewers for extra flavor and visual appeal.
  • Adjust herbs to your preference.
