Description
Grilled lemon herb chicken with sweet peaches and creamy goat cheese over fresh greens.
Ingredients

- 2 boneless, skinless chicken breasts
- 1 lemon, zested and juiced
- 2 tbsp olive oil
- 1 tbsp chopped fresh rosemary
- 1 tbsp chopped fresh thyme
- Salt and black pepper to taste
- 2 ripe peaches, sliced
- 4 cups mixed greens
- 4 oz goat cheese, crumbled
- 2 tbsp balsamic glaze
Instructions
- Preheat grill to medium-high heat.
- In a bowl, combine lemon zest and juice, olive oil, rosemary, thyme, salt, and pepper.
- Add chicken breasts to the marinade and turn to coat. Let marinate for at least 15 minutes.
- Grill chicken for 6-8 minutes per side, or until cooked through. Let rest for a few minutes, then slice.
- Arrange mixed greens on plates. Top with sliced chicken, peach slices, and crumbled goat cheese.
- Drizzle with balsamic glaze.
Notes
- You can substitute other herbs like basil or oregano.
- Grilled or roasted vegetables can be added.
