Description

Grilled lemon herb chicken with sweet peaches and creamy goat cheese over fresh greens.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 lemon, zested and juiced
  • 2 tbsp olive oil
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh thyme
  • Salt and black pepper to taste
  • 2 ripe peaches, sliced
  • 4 cups mixed greens
  • 4 oz goat cheese, crumbled
  • 2 tbsp balsamic glaze


Instructions

  1. Preheat grill to medium-high heat.
  2. In a bowl, combine lemon zest and juice, olive oil, rosemary, thyme, salt, and pepper.
  3. Add chicken breasts to the marinade and turn to coat. Let marinate for at least 15 minutes.
  4. Grill chicken for 6-8 minutes per side, or until cooked through. Let rest for a few minutes, then slice.
  5. Arrange mixed greens on plates. Top with sliced chicken, peach slices, and crumbled goat cheese.
  6. Drizzle with balsamic glaze.
