Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 1 (14 ounce) can sweetened condensed milk
  • 1/2 cup key lime juice (fresh or bottled)
  • 2 large egg yolks
  • 1 teaspoon lime zest


Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Combine graham cracker crumbs and 1/4 cup sugar in a medium bowl. Pour in the melted butter and mix until the crumbs are evenly moistened.
  3. Press the crumb mixture firmly and evenly into the bottom of the prepared pan. Bake the crust for 10 minutes. Remove from the oven and let it cool slightly.
  4. In a separate bowl, whisk together the sweetened condensed milk, key lime juice, egg yolks, and lime zest until smooth.
  5. Pour the lime filling evenly over the slightly cooled crust.
