- 2 ounces cream cheese, softened
- 1/4 teaspoon cream of tartar

Instructions
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Separate the eggs. Place the egg whites in a clean, dry bowl and the egg yolks in a separate bowl with the softened cream cheese.
- Add cream of tartar to the egg whites. Using an electric mixer, beat the egg whites on high speed until stiff peaks form.
- In the bowl with egg yolks and cream cheese, add salt and pepper. Beat until smooth and well combined.
- Gently fold the egg yolk mixture into the egg white mixture. Be careful not to deflate the egg whites.
- Spoon the mixture onto the prepared baking sheet in four equal rounds, spaced apart. These will be your cloud bread slices.
- Bake for 15-20 minutes, or until golden brown and set. Let cool completely on the baking sheet.
- Assemble your breakfast sandwiches using the cloud bread slices as the ‘bread’ and filling with your desired ingredients.
