- 2 tablespoons brown sugar

Instructions
- Preheat your oven to 400°F (200°C).
- Pat the rinsed chickpeas very dry with paper towels. This is key for crispiness!
- In a medium bowl, toss the dried chickpeas with olive oil until evenly coated.
- In a small bowl, whisk together the brown sugar, cinnamon, and salt.
- Sprinkle the cinnamon sugar mixture over the chickpeas and toss again until they are well coated.
- Spread the chickpeas in a single layer on a baking sheet.
- Roast for 20-30 minutes, shaking the pan halfway through, until the chickpeas are golden brown and crispy.
- Let them cool slightly before enjoying.
