  • 2 cans (15 ounces each) chickpeas, rinsed and drained
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the rinsed chickpeas very dry with paper towels. This is key for crispiness!
  3. In a medium bowl, toss the dried chickpeas with olive oil until evenly coated.
  4. In a small bowl, whisk together the brown sugar, cinnamon, and salt.
  5. Sprinkle the cinnamon sugar mixture over the chickpeas and toss again until they are well coated.
  6. Spread the chickpeas in a single layer on a baking sheet.
  7. Roast for 20-30 minutes, shaking the pan halfway through, until the chickpeas are golden brown and crispy.
  8. Let them cool slightly before enjoying.

  • For extra crispiness, you can remove the skins from the chickpeas after rinsing and draining.
