- 4 cups chopped fresh peaches (about 6-8 medium peaches)
- 2 cups granulated sugar
- 1/4 cup lemon juice
- 1 cinnamon stick
- 1/2 teaspoon ground cinnamon
Instructions
- Combine chopped peaches, sugar, lemon juice, cinnamon stick, and ground cinnamon in a large pot.
- Stir well to combine.
- Bring the mixture to a boil over medium-high heat, stirring occasionally.
- Reduce heat to low and simmer, stirring frequently, for 30-40 minutes, or until the preserves have thickened. Remove the cinnamon stick.
- Ladle the hot preserves into sterilized jars, leaving about 1/4 inch headspace.
- Wipe the rims of the jars clean and screw on the lids.
- Process the jars in a boiling water bath for 10 minutes.
- Let the jars cool completely before storing.
Notes
- For best results, use ripe but firm peaches.
- Adjust sugar to your sweetness preference.
- If you don’t have a cinnamon stick, use 1 teaspoon of ground cinnamon.
- Sterilize your jars and lids before filling.
