Description

Ingredients

  • 4 cups chopped fresh peaches (about 6-8 medium peaches)
  • 2 cups granulated sugar
  • 1/4 cup lemon juice
  • 1 cinnamon stick
  • 1/2 teaspoon ground cinnamon


Instructions

  1. Combine chopped peaches, sugar, lemon juice, cinnamon stick, and ground cinnamon in a large pot.
  2. Stir well to combine.
  3. Bring the mixture to a boil over medium-high heat, stirring occasionally.
  4. Reduce heat to low and simmer, stirring frequently, for 30-40 minutes, or until the preserves have thickened. Remove the cinnamon stick.
  5. Ladle the hot preserves into sterilized jars, leaving about 1/4 inch headspace.
  6. Wipe the rims of the jars clean and screw on the lids.
  7. Process the jars in a boiling water bath for 10 minutes.
  8. Let the jars cool completely before storing.

Notes

  • For best results, use ripe but firm peaches.
  • Adjust sugar to your sweetness preference.
  • If you don’t have a cinnamon stick, use 1 teaspoon of ground cinnamon.
