Description

Ingredients

  • 2 pounds yellow squash, sliced
  • 1/2 cup chopped onion
  • 1/4 cup butter, melted
  • 1 (10.75 ounce) can cream of chicken soup
  • 1 cup shredded Colby Jack cheese
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 sleeve Ritz crackers, crushed
  • 1/4 cup butter, melted for topping


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Steam or boil sliced yellow squash until tender. Drain well.
  3. In a large bowl, combine cooked squash, chopped onion, 1/4 cup melted butter, cream of chicken soup, Colby Jack cheese, milk, salt, and pepper. Mix until combined.
  4. Pour the squash mixture into a 9×13 inch baking dish.
  5. In a small bowl, combine crushed Ritz crackers and 1/4 cup melted butter. Stir to coat the crackers.
  6. Sprinkle the buttered cracker crumbs evenly over the squash mixture.
  7. Bake for 25-30 minutes, or until bubbly and the topping is golden brown.
  8. Serve warm.
