- 2 pounds yellow squash, sliced
- 1/2 cup chopped onion
- 1/4 cup butter, melted
- 1 (10.75 ounce) can cream of chicken soup
- 1 cup shredded Colby Jack cheese
- 1/2 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 sleeve Ritz crackers, crushed
- 1/4 cup butter, melted for topping
Instructions
- Preheat oven to 375°F (190°C).
- Steam or boil sliced yellow squash until tender. Drain well.
- In a large bowl, combine cooked squash, chopped onion, 1/4 cup melted butter, cream of chicken soup, Colby Jack cheese, milk, salt, and pepper. Mix until combined.
- Pour the squash mixture into a 9×13 inch baking dish.
- In a small bowl, combine crushed Ritz crackers and 1/4 cup melted butter. Stir to coat the crackers.
- Sprinkle the buttered cracker crumbs evenly over the squash mixture.
- Bake for 25-30 minutes, or until bubbly and the topping is golden brown.
- Serve warm.
Notes
- For a richer flavor, use a mixture of cheddar and Monterey Jack cheese.
- Add a pinch of garlic powder to the squash mixture for extra flavor.
