Description

Enjoy these delightful Zucchini Pizza Bites, a healthy and low-carb twist on your favorite pizza. Perfect for a quick snack or appetizer, these bites are a hit with both kids and adults!

Ingredients

Scale
  • 2 medium zucchinis, ends trimmed
  • 1 egg, beaten
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup pizza sauce
  • 1/4 cup shredded mozzarella cheese
  • Optional toppings: pepperoni, cooked mushrooms, olives

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Grate the zucchinis using the large holes of a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This is a crucial step for crispy bites!
  3. In a medium bowl, combine the squeezed zucchini, beaten egg, Parmesan cheese, almond flour, oregano, garlic powder, salt, and pepper. Mix well until everything is evenly incorporated.
  4. Shape the mixture into small bite-sized rounds or squares, about 1-1.5 inches in diameter. Place them on the prepared baking sheet.
  5. Bake for 15-20 minutes, or until the edges are golden brown and slightly firm.
  6. Remove the baking sheet from the oven. Spoon a small amount of pizza sauce onto each bite.
  7. Top with shredded mozzarella cheese and any other desired toppings.
  8. Return the baking sheet to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
  9. Let cool slightly before serving. Enjoy your delicious Zucchini Pizza Bites!
