- 1 pound large shrimp, peeled and deveined
- 2 medium zucchini, spiralized
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 cup dry white wine (optional)
- 1/4 cup fresh lemon juice
- 2 tablespoons fresh parsley, chopped
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
Instructions
- Prepare the zucchini noodles using a spiralizer. Set aside.
- Melt the butter in a large skillet over medium heat.
- Add the minced garlic and red pepper flakes (if using). Cook until fragrant, about 1 minute.
- Add the shrimp to the skillet. Cook for 2-3 minutes per side, until pink and cooked through.
- If using, pour in the white wine and let it simmer for 1 minute.
- Stir in the lemon juice and chopped parsley.
- Add the zucchini noodles to the skillet. Toss gently to coat with the sauce. Cook for 1-2 minutes, until the zucchini noodles are slightly tender but still have a bite.
- Season with salt and pepper to taste.
- Serve immediately.
Notes
- For a dairy-free option, use olive oil instead of butter.
- If you don’t have a spiralizer, you can use a vegetable peeler to create wide ribbons or julienne strips.
- Adjust the amount of garlic and red pepper flakes to your preference.
