Ingredients

  • 2 medium zucchinis
  • 1/2 cup fresh basil leaves
  • 1/4 cup pine nuts
  • 2 cloves garlic
  • 1/4 cup grated Parmesan cheese

  • Salt to taste

Instructions

  1. Wash the zucchinis. Use a spiralizer to create noodles from the zucchinis.
  2. In a food processor, combine basil leaves, pine nuts, garlic, and Parmesan cheese.
  3. Pulse until finely chopped.
  4. Slowly drizzle in the olive oil while the processor is running until the pesto is smooth.
  5. Season the pesto with salt and pepper.
  6. Add the zucchini noodles to a bowl.
  7. Pour the pesto over the zucchini noodles.
  8. Toss gently to coat the noodles evenly with the pesto.
  9. Serve immediately.
