Ingredients

  • 2 medium zucchini, sliced
  • 2 cups fresh corn kernels
  • 2 cups cherry tomatoes, halved
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1/4 cup fresh basil, chopped
  • Salt and black pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine sliced zucchini, corn kernels, and halved cherry tomatoes.
  3. Drizzle with olive oil and add minced garlic, chopped basil, salt, and pepper. Toss to coat.
  4. Transfer the vegetable mixture to a baking dish.
  5. In a small bowl, mix grated Parmesan cheese and breadcrumbs.
  6. Sprinkle the Parmesan mixture evenly over the vegetables.
  7. Bake for 25-30 minutes, or until the vegetables are tender and the crust is golden brown.
