Instructions
- Preheat your oven to 350 degrees Fahrenheit. Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, salt, and baking powder. Set aside.
- In a large bowl, whisk the eggs, granulated sugar, and brown sugar until combined.
- Whisk in the vegetable oil and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing only until just combined. Do not overmix.
- Gently fold in the grated zucchini.
- Pour the batter evenly into the prepared loaf pan.
- Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Notes
- Do not squeeze the moisture from the grated zucchini; this liquid helps keep the bread moist.
- For a richer flavor, substitute half of the granulated sugar with an additional 1/4 cup of brown sugar.
- This bread freezes well once completely cooled. Wrap tightly in plastic wrap and then foil.
