- 2 pounds butternut or acorn squash, peeled, seeded, and cubed
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup vegetable broth
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Stir in the cubed squash, dried thyme, salt, and pepper.
- Pour in the vegetable broth, bring to a simmer, then cover and cook for 10-15 minutes, or until the squash is tender-crisp.
- Transfer the squash mixture to a baking dish.
- In a small bowl, combine the grated Parmesan cheese and breadcrumbs. Sprinkle evenly over the squash.
- Bake for 20-25 minutes, or until the topping is golden brown and the casserole is bubbly.
Notes
- You can substitute acorn squash for butternut squash, or use a combination of both.
- For an extra creamy texture, stir in 1/4 cup of heavy cream with the vegetable broth.
- Garnish with fresh parsley before serving, if desired.
