- 2 lbs boneless, skinless chicken breasts
- 1 large white onion, chopped
- 4 cloves garlic, minced
- 2 (15 ounce) cans cannellini beans, rinsed and drained
- 1 (15 ounce) can great northern beans, rinsed and drained
- 1 (4 ounce) can diced green chiles, undrained
- 4 cups chicken broth
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (optional)
- 1 cup heavy cream or half-and-half
- Salt and freshly ground black pepper to taste
- Optional toppings: shredded Monterey Jack cheese, fresh cilantro, avocado
Instructions
- Place chicken breasts in a large pot or Dutch oven. Cover with chicken broth. Bring to a boil, then reduce heat, cover, and simmer until chicken is cooked through, about 15-20 minutes.
- Remove chicken from the pot and shred it using two forks. Set aside.
- In the same pot, sauté the chopped onion over medium heat until soft, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
- Stir in the cumin, oregano, and cayenne pepper, if using. Cook for 30 seconds.
- Add the rinsed beans and the undrained diced green chiles to the pot.
- Return the shredded chicken to the pot. Pour in the reserved broth from cooking the chicken (you may not need all of it; aim for a good chili consistency).
- Bring the mixture to a gentle simmer. Cook for 10 minutes, allowing flavors to meld.
- Stir in the heavy cream or half-and-half. Heat through gently, but do not boil after adding cream.
- Season with salt and pepper to your liking. Serve hot with your favorite toppings.

- For an extra layer of flavor, roast the chicken breasts before shredding instead of boiling them in the broth.
- Rinsing the canned beans removes excess starch and sodium.
