  • 1 pound carrots, peeled and sliced diagonally
  • 2 tablespoons unsalted butter
  • 1/4 cup packed brown sugar
  • 2 tablespoons whiskey
  • 1 tablespoon water
  • 1/4 teaspoon salt
  • Pinch of black pepper


Instructions

  1. Place the sliced carrots in a medium saucepan and cover them with water. Add a pinch of salt.
  2. Bring the water to a boil over high heat, then reduce heat to medium-low, cover, and simmer for 8 to 10 minutes, or until the carrots are tender-crisp.
  3. Drain the carrots well and set them aside.
  4. In the same saucepan, melt the butter over medium heat.
  5. Stir in the brown sugar until it dissolves, about 1 minute.
  6. Carefully pour in the whiskey and water. Bring the mixture to a gentle simmer, stirring constantly. Let it cook for 2 minutes until the glaze slightly thickens.
  7. Return the drained carrots to the saucepan. Toss gently to coat them evenly with the whiskey glaze.
  8. Cook for 1 to 2 minutes until the carrots are fully coated and heated through.
  9. Remove from heat, season with black pepper, and serve immediately.

  • For a deeper flavor, use a bourbon or rye whiskey.
