- 1 cup heavy cream, chilled
- 4 ounces bittersweet chocolate, finely chopped
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Place the chopped chocolate in a heatproof bowl.
- In a small saucepan, heat 1/4 cup of the heavy cream over medium heat until it just begins to simmer. Do not boil.
- Pour the hot cream over the chopped chocolate. Let it sit for 1 minute, then whisk until smooth and fully melted. Stir in the vanilla extract and salt. Let the chocolate mixture cool slightly.
- In a separate, clean bowl, whip the remaining 3/4 cup of heavy cream and the granulated sugar with an electric mixer until stiff peaks form.
- Gently fold about one-third of the whipped cream into the cooled chocolate mixture to lighten it. Then, carefully fold in the remaining whipped cream until just combined and no streaks remain.
- Spoon the mousse into individual serving dishes or glasses.
- Chill for at least 2 hours, or until firm.
Notes
- For a richer flavor, use dark chocolate with at least 70% cocoa content.
- Ensure your bowl and whisk are completely dry when whipping the cream to achieve stiff peaks.
