  • 4 ounces bittersweet chocolate, finely chopped
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt


Instructions

  1. Place the chopped chocolate in a heatproof bowl.
  2. In a small saucepan, heat 1/4 cup of the heavy cream over medium heat until it just begins to simmer. Do not boil.
  3. Pour the hot cream over the chopped chocolate. Let it sit for 1 minute, then whisk until smooth and fully melted. Stir in the vanilla extract and salt. Let the chocolate mixture cool slightly.
  4. In a separate, clean bowl, whip the remaining 3/4 cup of heavy cream and the granulated sugar with an electric mixer until stiff peaks form.
  5. Gently fold about one-third of the whipped cream into the cooled chocolate mixture to lighten it. Then, carefully fold in the remaining whipped cream until just combined and no streaks remain.
  6. Spoon the mousse into individual serving dishes or glasses.
  7. Chill for at least 2 hours, or until firm.

Notes

  • For a richer flavor, use dark chocolate with at least 70% cocoa content.
  • Ensure your bowl and whisk are completely dry when whipping the cream to achieve stiff peaks.
