Ingredients

  • 8 ounces pasta
  • 1 cup chopped broccoli florets
  • 1 cup chopped bell peppers (various colors)
  • 1/2 cup chopped cherry tomatoes
  • 1/4 cup shredded carrots
  • 1/4 cup chopped cucumber
  • 1/4 cup Italian dressing
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. Blanch broccoli florets for 1-2 minutes. Drain and rinse with cold water.
  3. In a large bowl, combine cooked pasta, broccoli, bell peppers, cherry tomatoes, carrots, and cucumber.
  4. Pour Italian dressing over the salad and toss gently to combine.
  5. Season with salt and pepper to taste.
  6. Divide the pasta salad into individual cups or containers for easy packing.

Notes

You can add other favorite vegetables like peas or corn. For a creamier dressing, mix in a tablespoon of mayonnaise or Greek yogurt.
