Ingredients

- 8 ounces pasta
- 1 cup chopped broccoli florets
- 1 cup chopped bell peppers (various colors)
- 1/2 cup chopped cherry tomatoes
- 1/4 cup shredded carrots
- 1/4 cup chopped cucumber
- 1/4 cup Italian dressing
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- Blanch broccoli florets for 1-2 minutes. Drain and rinse with cold water.
- In a large bowl, combine cooked pasta, broccoli, bell peppers, cherry tomatoes, carrots, and cucumber.
- Pour Italian dressing over the salad and toss gently to combine.
- Season with salt and pepper to taste.
- Divide the pasta salad into individual cups or containers for easy packing.
Notes
You can add other favorite vegetables like peas or corn. For a creamier dressing, mix in a tablespoon of mayonnaise or Greek yogurt.
