- 4 ears of corn, husked
- 2 tablespoons unsalted butter, melted
- 1/2 cup mayonnaise
- 1/4 cup crumbled cotija cheese
- 2 tablespoons fresh lime juice
- 1/2 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- Salt to taste
- Fresh cilantro, chopped, for garnish
- Lime wedges for serving
Instructions
- Preheat your grill to medium-high heat.
- Brush the husked corn ears with melted butter.
- Place the corn on the hot grill. Grill for 10-12 minutes. Turn frequently until kernels are tender and lightly charred.
- While corn grills, prepare the topping. In a small bowl, combine mayonnaise, cotija cheese, lime juice, chili powder, and smoked paprika. Mix well.
- Remove grilled corn from the grill.
- Generously spread the mayonnaise mixture over each ear of corn. Ensure all sides are coated.
- Season with salt to taste.
- Garnish with fresh cilantro. Serve immediately with lime wedges.
Notes
- For extra flavor, add a pinch of garlic powder to the mayonnaise mixture.
- If cotija cheese is unavailable, use crumbled feta cheese as a substitute.
- Adjust chili powder to your spice preference.
- You can boil or roast the corn instead of grilling if a grill is not available.
