Description

Ingredients

  • 4 ears of corn, husked
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup mayonnaise
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • Salt to taste
  • Fresh cilantro, chopped, for garnish
  • Lime wedges for serving


Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the husked corn ears with melted butter.
  3. Place the corn on the hot grill. Grill for 10-12 minutes. Turn frequently until kernels are tender and lightly charred.
  4. While corn grills, prepare the topping. In a small bowl, combine mayonnaise, cotija cheese, lime juice, chili powder, and smoked paprika. Mix well.
  5. Remove grilled corn from the grill.
  6. Generously spread the mayonnaise mixture over each ear of corn. Ensure all sides are coated.
  7. Season with salt to taste.
  8. Garnish with fresh cilantro. Serve immediately with lime wedges.

  • For extra flavor, add a pinch of garlic powder to the mayonnaise mixture.
