- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (13.5 ounce) can full-fat coconut milk
- 2 (15 ounce) cans chickpeas, rinsed and drained
- 1 cup vegetable broth
- 1/2 cup fresh spinach, chopped
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the coconut oil in a large pot or Dutch oven over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the garlic and ginger. Cook for 1 minute until fragrant.
- Add the cumin, coriander, turmeric, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
