Description

Ingredients

  • 4 large baking potatoes, scrubbed
  • 1 tablespoon olive oil
  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups milk
  • 1 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 4 slices bacon, cooked and crumbled
  • 2 tablespoons chopped fresh chives
  • Salt and black pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C). Pierce the potatoes several times with a fork and bake for 45-60 minutes, or until tender. Let cool slightly, then scoop out the flesh and set aside. Discard the skins.
  2. While the potatoes are baking, heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Add the chicken broth to the pot and bring to a simmer.
  4. Stir in the reserved potato flesh, milk, and heavy cream. Cook, stirring occasionally, until heated through and slightly thickened. Do not boil.
  5. Reduce the heat to low and stir in the shredded cheddar cheese and sour cream until well combined and smooth.
  6. Season with salt and black pepper to your taste.
  7. Ladle the soup into bowls. Garnish with crumbled bacon and fresh chives.

Notes

  • For a vegetarian option, use vegetable broth instead of chicken broth and omit the bacon.
  • You can add other toppings like extra cheese, green onions, or a dollop of Greek yogurt.
