  • 2 pounds yellow squash, thinly sliced
  • 1 cup chopped onion
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 2 large eggs, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup crushed Ritz crackers
  • 1/4 cup melted butter


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced yellow squash and chopped onion.
  3. In a separate bowl, mix together the cream of mushroom soup, sour cream, shredded cheddar cheese, milk, beaten eggs, salt, and pepper until well combined.
  4. Pour the soup mixture over the squash and onion mixture. Stir gently to coat everything evenly.
