Ingredients

Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop rounded tablespoons of dough and gently flatten them slightly on the prepared baking sheets.
- Bake for 9 to 11 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Prepare the caramel: If using caramel candies, melt them gently in a saucepan with the heavy cream over low heat, stirring until smooth. If using sauce, simply warm it slightly.
- Once cookies are cool, spread a thin layer of softened caramel onto the top of each cookie. Let the caramel set slightly (about 15 minutes).
- Melt the milk chocolate chips with the coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Dip the caramel side of each cookie into the melted chocolate, or drizzle the chocolate over the tops.
- Allow the chocolate to set completely before serving or storing.
