Ingredients

  • 1/4 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 medium zucchinis, spiralized
  • 1 tablespoon olive oil
  • 1/4 cup marinara sauce


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, breadcrumbs, egg, minced garlic, Parmesan cheese, Italian seasoning, salt, and pepper. Mix gently until just combined.
  3. Roll the mixture into 1-inch meatballs.
  4. Place the meatballs on a baking sheet lined with parchment paper.
  5. Bake for 15-20 minutes, or until cooked through and browned.
  6. While the meatballs are baking, heat olive oil in a large skillet over medium heat.
  7. Add the spiralized zucchini noodles to the skillet and sauté for 2-3 minutes until slightly tender.
  8. Add the marinara sauce to the zucchini noodles and toss to coat.
  9. Serve the turkey meatballs over the zucchini noodles.
