Ingredients

  • 1 lb ground turkey
  • 1/4 cup almond flour
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 medium zucchini, spiralized (for zoodles)
  • 1 tablespoon olive oil (for cooking)
  • 1/2 cup low-sugar tomato sauce (optional, for topping)


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground turkey, almond flour, egg, minced garlic, Parmesan cheese, oregano, basil, salt, and pepper. Mix gently with your hands until just combined. Do not overmix.
  3. Roll the mixture into small, uniform meatballs, about 1.5 inches in diameter. Place them on the prepared baking sheet.
  4. Bake the meatballs for 18-20 minutes, or until they are cooked through and browned.
  5. While the meatballs bake, prepare your zoodles. You can lightly sauté the zoodles in olive oil for 2-3 minutes until slightly tender, or serve them raw for a crunchier texture.
  6. If using tomato sauce, warm it briefly.
  7. Serve the warm turkey meatballs over the bed of zoodles. Top with a spoonful of tomato sauce, if desired.

Notes

  • For extra flavor, add a pinch of red pepper flakes to the meatball mixture.
  • Make sure your zucchini noodles are dry before cooking or serving; excess moisture makes them watery.
