- 1/2 red onion, cut into 1-inch pieces
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 clove garlic, minced
- 1 teaspoon grated fresh ginger
- 1/4 teaspoon black pepper
Instructions
- In a bowl, whisk together soy sauce, olive oil, honey, minced garlic, grated ginger, and black pepper to make the marinade.
- Add the chicken cubes to the marinade, toss to coat, and let it marinate for at least 30 minutes (or up to 2 hours) in the refrigerator.
- While the chicken marinates, prepare your vegetables and pineapple chunks.
- Thread the marinated chicken and pineapple chunks, red bell pepper, green bell pepper, and red onion onto skewers, alternating the ingredients.
- Preheat your grill to medium-high heat.
- Grill the kabobs for about 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
