  • 1/2 red onion, cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon black pepper


Instructions

  1. In a bowl, whisk together soy sauce, olive oil, honey, minced garlic, grated ginger, and black pepper to make the marinade.
  2. Add the chicken cubes to the marinade, toss to coat, and let it marinate for at least 30 minutes (or up to 2 hours) in the refrigerator.
  3. While the chicken marinates, prepare your vegetables and pineapple chunks.
  4. Thread the marinated chicken and pineapple chunks, red bell pepper, green bell pepper, and red onion onto skewers, alternating the ingredients.
