Ingredients
Scale
- 6 cups mixed berries (fresh or frozen: strawberries, blueberries, raspberries, blackberries)
- 1/2 cup granulated sugar, plus more for sprinkling
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into cubes
- 1/2 cup milk
Instructions
- Preheat your oven to 375°F (190°C).
- In a 10-inch cast iron skillet, combine the mixed berries, 1/2 cup sugar, cornstarch, lemon juice, and vanilla extract. Toss gently to coat the berries evenly.
- In a medium bowl, whisk together the flour, 1/4 cup sugar, baking powder, and salt.
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Pour in the milk and stir until just combined to form a soft dough. Do not overmix.
- Drop spoonfuls of the dough over the berry mixture in the skillet. Spread them out slightly to cover most of the surface.
- Sprinkle a little extra sugar over the dough.
- Bake for 35-45 minutes, or until the topping is golden brown and the berry filling is bubbly.
- Let the cobbler cool for at least 15 minutes before serving.
Notes
- For a richer flavor, add a pinch of cinnamon to the berry mixture.
- If using frozen berries, you may need to bake the cobbler a few minutes longer.
- Serve warm with a scoop of vanilla ice cream or whipped cream.
