- 2 lb tri-tip steak
- 1 tablespoon coarse salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon olive oil
- 1 cup fresh rhubarb, chopped
- 1/2 cup dry red wine
- 1/4 cup beef broth
- 2 tablespoons balsamic vinegar
- 1 tablespoon brown sugar
- 1 shallot, minced
- 1 teaspoon fresh thyme leaves
Instructions
- Pat the tri-tip steak dry. Rub the steak all over with olive oil, then season evenly with salt, pepper, garlic powder, and onion powder.
- Preheat your grill to high heat (about 500°F) for direct searing, or preheat your oven to 400°F for roasting.
- For grilling: Sear the steak over direct high heat for 3-4 minutes per side to develop a crust. Move the steak to indirect heat and cook until an internal temperature of 130°F for medium-rare is reached (about 15-25 minutes total, depending on thickness).
- For roasting: Place the steak on a rack in a roasting pan. Roast for 25-35 minutes until the internal temperature reaches 130°F for medium-rare.
- Remove the steak from the heat, tent loosely with foil, and let it rest for 10 minutes before slicing against the grain.
- While the steak rests, make the sauce: Sauté the minced shallot in a small saucepan over medium heat until soft, about 2 minutes.
- Add the chopped rhubarb, red wine, beef broth, balsamic vinegar, brown sugar, and thyme to the saucepan.
- Bring the mixture to a simmer. Reduce heat to low and cook, stirring occasionally, for 10-15 minutes, or until the rhubarb has broken down and the sauce has thickened slightly.
- Taste the sauce and adjust seasoning if needed.
- Slice the rested tri-tip steak and serve immediately topped with the savory rhubarb sauce.
Notes
- For a richer sauce, substitute beef broth with an equal amount of dry sherry.
- If you prefer a smoother sauce, use an immersion blender to lightly process the sauce after cooking.
- This dish pairs well with roasted asparagus or creamy mashed potatoes.
