Instructions
- In a medium bowl, combine the rolled oats, peanut butter, honey, chia seeds, chocolate chips (if using), and vanilla extract.
- Stir everything together until well combined. The mixture should be sticky.
- Roll the mixture into small balls, about 1 inch in diameter.
- Place the energy bites on a plate or baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to allow them to firm up.
Notes
