Description

A quick and easy recipe for a creamy tortellini pasta salad perfect for picnics or weeknight meals.


Ingredients

  • 1 (16 ounce) package cheese tortellini, cooked and drained
  • 1 cup cherry or grape tomatoes, halved
  • 1 cup cucumber, chopped
  • 1/2 cup sliced black olives
  • 1/2 cup shredded carrot
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1/4 cup Italian dressing
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste


Instructions

  1. Cook the tortellini according to package directions. Drain well and rinse with cold water to cool completely. Place in a large bowl.
  2. Add the tomatoes, cucumber, black olives, carrot, and red onion to the bowl with the cooled tortellini.
  3. In a separate small bowl, whisk together the mayonnaise, Italian dressing, Dijon mustard, and Italian seasoning.
  4. Pour the dressing mixture over the tortellini and vegetables.
  5. Toss gently until all ingredients are evenly coated.
  6. Season with salt and pepper to your preference.
  7. Cover the bowl and refrigerate for at least 1 hour before serving to allow flavors to blend.

Notes

  • You can add cooked, diced chicken breast for a heartier meal.
  • For a lighter dressing, substitute half the mayonnaise with plain Greek yogurt.
