Description

Ingredients

  • 1 pound pasta
  • 1 (5 ounce) can tuna, drained
  • 1 pint cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  3. Add halved cherry tomatoes to the skillet. Cook for 5-7 minutes, until they begin to soften and release their juices.
  4. Add the drained tuna to the skillet and break it up with a spoon.
  5. Add the cooked pasta to the skillet with the tuna and tomato mixture.
  6. Toss everything together. If the pasta seems dry, add a little of the reserved pasta water.
  7. Stir in the chopped fresh basil.
  8. Season with salt and black pepper to taste.
  9. Serve immediately.

Notes

  • Use good quality canned tuna for best flavor.
  • Feel free to add other vegetables like spinach or olives.
  • A squeeze of lemon juice at the end can brighten the flavors.
