Description

Ingredients

  • 1 block (14 oz) firm or extra-firm tofu, pressed
  • 1 tablespoon olive oil
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon black salt (kala namak) for eggy flavor
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 6 small corn or flour tortillas
  • Your favorite taco toppings (salsa, avocado, cilantro)


Instructions

  1. Crumble the pressed tofu into a bowl using your hands.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Add the crumbled tofu to the skillet. Cook for 5-7 minutes, stirring occasionally, until some moisture evaporates.
  4. Sprinkle turmeric, black salt, garlic powder, and onion powder over the tofu. Stir well to coat and cook for another 2 minutes until the tofu is heated through and seasoned.
  5. Taste and adjust salt and pepper as needed.
  6. Warm the tortillas according to package directions.
  7. Spoon the tofu scramble into the warm tortillas.
  8. Top with your preferred taco toppings and serve immediately.

Notes

  • Pressing the tofu removes excess water, which helps it absorb flavor better.
  • Black salt (kala namak) provides an authentic, slightly sulfuric, eggy taste to the scramble.
