- 1 block (14 oz) firm or extra-firm tofu, pressed
- 1 tablespoon olive oil
- 1/2 teaspoon turmeric
- 1/4 teaspoon black salt (kala namak) for eggy flavor
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 6 small corn or flour tortillas
- Your favorite taco toppings (salsa, avocado, cilantro)
Instructions
- Crumble the pressed tofu into a bowl using your hands.
- Heat olive oil in a non-stick skillet over medium heat.
- Add the crumbled tofu to the skillet. Cook for 5-7 minutes, stirring occasionally, until some moisture evaporates.
- Sprinkle turmeric, black salt, garlic powder, and onion powder over the tofu. Stir well to coat and cook for another 2 minutes until the tofu is heated through and seasoned.
- Taste and adjust salt and pepper as needed.
- Warm the tortillas according to package directions.
- Spoon the tofu scramble into the warm tortillas.
- Top with your preferred taco toppings and serve immediately.
Notes
- Pressing the tofu removes excess water, which helps it absorb flavor better.
- Black salt (kala namak) provides an authentic, slightly sulfuric, eggy taste to the scramble.
- Feel free to add other vegetables like diced onions or bell peppers when cooking the tofu.
