- 12 cups Chex cereal (rice, corn, or wheat mix)
- 1 cup pretzel twists or sticks
- 1 cup pecans or mixed nuts
- 1 cup (2 sticks) unsalted butter
- 2 cups packed light brown sugar
- 1/2 cup light corn syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1 teaspoon salt
Instructions
- Preheat your oven to 250 degrees F. Line two large baking sheets with parchment paper.
- In a very large bowl, combine the Chex cereal, pretzels, and nuts. Set aside.
- In a medium saucepan, combine the butter, brown sugar, and corn syrup. Cook over medium heat, stirring constantly, until the mixture reaches a full rolling boil. Boil for exactly one minute, stirring gently.
- Remove the saucepan from the heat immediately. Stir in the vanilla extract, baking soda, and salt quickly. The mixture will foam up.
- Pour the hot toffee mixture evenly over the cereal mixture in the large bowl. Gently fold the ingredients together using a large rubber spatula until everything is lightly coated. Work quickly.
- Spread the coated mix in a thin, even layer onto the prepared baking sheets. Do not let large clumps form.
- Bake for 30 minutes, stirring gently every 10 minutes to prevent burning and promote even coating.
- Remove from the oven and let the mix cool completely on the baking sheets without stirring. The crunch develops as it cools. Once cool, break into pieces and store in an airtight container.
Notes
- For extra flavor, add 1 cup of chocolate chips or M&Ms after the mix has cooled completely.
- You can substitute pecans with other nuts like walnuts or almonds.
- If you want a stronger salty flavor, increase the salt in the toffee mixture to 1 1/2 teaspoons.
