Description
Make decadent chocolate lava cakes. These individual cakes have a molten chocolate center.
Ingredients

- 1/2 cup (1 stick) unsalted butter
- 4 ounces bittersweet chocolate, chopped
- 2 large eggs
- 2 egg yolks
- 1/4 cup granulated sugar
- 1 tablespoon all-purpose flour
- 1/4 teaspoon salt
- Powdered sugar for dusting (optional)
- Fresh berries or whipped cream for serving (optional)
Instructions
- Preheat your oven to 425°F (220°C). Butter and flour four 6-ounce ramekins or custard cups.
- Melt butter and chopped chocolate in a heatproof bowl set over a pot of simmering water. Stir until smooth. Remove from heat and set aside to cool slightly.
- In a separate bowl, whisk together eggs, egg yolks, and granulated sugar until light and fluffy.
- Gently fold the cooled chocolate mixture into the egg mixture.
- Stir in the flour and salt until just combined. Do not overmix.
- Divide the batter evenly among the prepared ramekins.
- Bake for 12-14 minutes, or until the edges are set but the center still jiggles slightly.
- Carefully remove from the oven. Let cool for 1 minute, then invert each cake onto a serving plate.
- Dust with powdered sugar and serve immediately with berries or whipped cream, if desired.
Notes
- Do not overbake the cakes. The center should be molten.
- You can prepare the batter ahead of time and refrigerate it. Bring to room temperature before baking.
- For best results, use good quality bittersweet chocolate.
