  • 1 loaf (16 ounces) stale bread, cut into 1-inch cubes
  • 1 cup (2 sticks) unsalted butter
  • 2 cups chopped yellow onion (about 1 large onion)
  • 1 1/2 cups chopped celery (about 3 ribs)
  • 2 cloves garlic, minced
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups chicken or vegetable broth
  • 2 large eggs, lightly beaten


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin.
  2. Spread the bread cubes on a baking sheet and toast in the preheated oven for 10-15 minutes, until lightly golden. Remove from oven and set aside.
  3. Melt the butter in a large skillet over medium heat. Add the chopped onion and celery and cook until softened, about 8-10 minutes. Add the minced garlic, sage, thyme, salt, and pepper. Cook for 1 minute more until fragrant.
  4. In a large bowl, combine the toasted bread cubes and the cooked onion and celery mixture.
  5. In a separate bowl, whisk together the chicken broth and the beaten eggs. Pour this mixture over the bread and vegetable mixture. Gently toss to combine, ensuring all bread cubes are moistened.
  6. Spoon the stuffing mixture evenly into the prepared muffin cups, pressing down lightly.
  7. Bake for 25-30 minutes, or until the tops are golden brown and the stuffing is set.
  8. Let the muffins cool in the tin for a few minutes before carefully removing them.
