- 1 cup buttermilk
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 1 teaspoon grated ginger
- 1 teaspoon garlic powder

- 1/2 cup cornstarch
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cayenne pepper

- 4 brioche buns

- For Spicy Slaw: 2 cups shredded cabbage, 1/4 cup chopped cilantro, 2 tablespoons mayonnaise, 1 tablespoon sweet chili sauce, 1 teaspoon rice vinegar
Instructions
- Combine buttermilk, fish sauce, lime juice, ginger, and garlic powder in a bowl. Add chicken pieces and marinate for at least 2 hours or overnight.
- In a separate shallow dish, whisk together flour, cornstarch, salt, black pepper, and cayenne pepper.
- Remove chicken from the marinade, letting excess drip off. Dredge each piece thoroughly in the flour mixture, pressing firmly to coat.
- Heat 2 inches of vegetable oil in a deep skillet to 350 degrees F (175 degrees C).
- Carefully place chicken into the hot oil, ensuring not to overcrowd the pan. Fry for 6 to 8 minutes per side, until golden brown and the internal temperature reaches 165 degrees F (74 degrees C). Remove and drain on a wire rack.
- Prepare the slaw by mixing cabbage, cilantro, mayonnaise, sweet chili sauce, and rice vinegar in a bowl.
- Lightly butter the cut sides of the brioche buns and toast them in a dry pan until golden.
- Assemble the sandwich: place a piece of fried chicken on the bottom bun, top with a generous portion of spicy slaw, and place the top bun on.
Notes
- For extra crispiness, double-dredge the chicken: coat in flour, dip briefly back into the marinade, then coat again in the flour mixture.
- Use lemongrass or galangal powder in the marinade for a deeper Thai flavor base.
- If you prefer a sweeter glaze, brush the cooked chicken with a mixture of honey and sriracha before serving.
