Description

  • 1 cup buttermilk
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon grated ginger
  • 1 teaspoon garlic powder
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • Vegetable oil for frying
  • 4 brioche buns
  • Butter for toasting
  • For Spicy Slaw: 2 cups shredded cabbage, 1/4 cup chopped cilantro, 2 tablespoons mayonnaise, 1 tablespoon sweet chili sauce, 1 teaspoon rice vinegar


Instructions

  1. Combine buttermilk, fish sauce, lime juice, ginger, and garlic powder in a bowl. Add chicken pieces and marinate for at least 2 hours or overnight.
  2. In a separate shallow dish, whisk together flour, cornstarch, salt, black pepper, and cayenne pepper.
  3. Remove chicken from the marinade, letting excess drip off. Dredge each piece thoroughly in the flour mixture, pressing firmly to coat.
  4. Heat 2 inches of vegetable oil in a deep skillet to 350 degrees F (175 degrees C).
  5. Carefully place chicken into the hot oil, ensuring not to overcrowd the pan. Fry for 6 to 8 minutes per side, until golden brown and the internal temperature reaches 165 degrees F (74 degrees C). Remove and drain on a wire rack.
  6. Prepare the slaw by mixing cabbage, cilantro, mayonnaise, sweet chili sauce, and rice vinegar in a bowl.
  7. Lightly butter the cut sides of the brioche buns and toast them in a dry pan until golden.
  8. Assemble the sandwich: place a piece of fried chicken on the bottom bun, top with a generous portion of spicy slaw, and place the top bun on.

Notes

  • For extra crispiness, double-dredge the chicken: coat in flour, dip briefly back into the marinade, then coat again in the flour mixture.
  • Use lemongrass or galangal powder in the marinade for a deeper Thai flavor base.
  • If you prefer a sweeter glaze, brush the cooked chicken with a mixture of honey and sriracha before serving.
