- 1 lb ground pork
- 1/4 cup panko breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- Salt and black pepper to taste
- 1 tablespoon vegetable oil
- 1/2 cup pineapple chunks, drained
- 1/4 cup ketchup
- 2 tablespoons rice vinegar
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- In a bowl, combine ground pork, panko breadcrumbs, egg, minced garlic, soy sauce, salt, and pepper. Mix well.
- Roll the mixture into small meatballs, about 1 inch in diameter.
- Heat vegetable oil in a large skillet over medium-high heat. Add the meatballs and cook until browned on all sides and cooked through, about 5-7 minutes. Remove meatballs from skillet and set aside.
- In the same skillet, add pineapple chunks and cook for 1-2 minutes until slightly softened.
- In a small bowl, whisk together ketchup, rice vinegar, and brown sugar. Pour this mixture into the skillet with the pineapple.
- In another small bowl, whisk together cornstarch and water to create a slurry. Add this to the skillet and stir until the sauce thickens.
- Return the cooked meatballs to the skillet and toss to coat them evenly in the sweet and sour sauce.
- Serve hot.
Notes
- For extra flavor, you can add a tablespoon of grated ginger to the meatball mixture.
- Feel free to add other vegetables like bell peppers or onions to the sauce.
