Ingredients

  • 1 whole beef brisket (about 12-14 pounds)
  • 1/2 cup brown sugar
  • 1/4 cup paprika
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 teaspoon cayenne pepper
  • 1/2 cup apple cider vinegar
  • 1/4 cup Worcestershire sauce
  • 1/4 cup water
  • 1/4 cup your favorite BBQ sauce


Instructions

  1. Trim excess fat from the brisket, leaving about 1/4 inch.
  2. Combine brown sugar, paprika, salt, black pepper, garlic powder, and cayenne pepper in a small bowl to create the rub.
  3. Generously rub the spice mixture all over the brisket.
  4. Wrap the brisket tightly in plastic wrap and refrigerate for at least 4 hours, or preferably overnight.
  5. Preheat your smoker to 225°F (107°C). Use your preferred smoking wood (hickory, oak, or mesquite work well).
  6. Place the brisket directly on the smoker grates.
  7. Smoke the brisket for about 6-8 hours, or until the internal temperature reaches 160°F (71°C).
  8. In a small bowl, whisk together apple cider vinegar, Worcestershire sauce, and water to make a spritz.
  9. Spritz the brisket every hour after the first 3 hours of smoking.
  10. Once the brisket reaches 160°F, remove it from the smoker.
  11. Wrap the brisket tightly in butcher paper or foil.
  12. Return the wrapped brisket to the smoker and continue cooking at 225°F.
  13. Cook for another 4-6 hours, or until the internal temperature reaches 195-205°F (90-96°C) and a probe slides in with little resistance.
  14. Remove the brisket from the smoker and let it rest, still wrapped, in a cooler or a warm oven for at least 1 hour, or up to 4 hours.
  15. Unwrap the brisket and slice against the grain.
  16. Warm your favorite BBQ sauce and serve on the side.
