Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup chopped fresh parsley
  • For the Dressing:
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon maple syrup


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper on a baking sheet.
  3. Roast for 20 to 25 minutes, turning halfway, until the potatoes are tender and slightly browned. Let them cool slightly.
  4. While the potatoes roast, prepare the dressing. Whisk together the apple cider vinegar, 2 tablespoons of olive oil, Dijon mustard, and maple syrup in a small bowl.
  5. In a large bowl, combine the slightly cooled roasted sweet potatoes, sliced red onion, and chopped parsley.
  6. Pour the dressing over the salad and toss gently to coat all ingredients evenly.
  7. Serve warm or at room temperature.
