Description

Ingredients

  • 1 large sweet potato, peeled and diced
  • 1 tablespoon olive oil
  • 1/2 red onion, chopped
  • 1 bell pepper (any color), chopped
  • 1 cup cooked sausage or bacon, crumbled (optional)
  • 2 eggs
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potato and cook for 10-12 minutes, stirring occasionally, until tender and slightly browned.
  3. Add chopped red onion and bell pepper to the skillet. Cook for another 5-7 minutes until softened.
  4. If using, stir in cooked sausage or bacon.
  5. Make two wells in the hash and crack an egg into each well.
  6. Cover the skillet and cook for 3-5 minutes, or until the egg whites are set and the yolks are cooked to your preference.
  7. Season with salt and pepper to taste.
  8. Serve immediately.
