Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced sweet potato and cook for 10-12 minutes, stirring occasionally, until tender and slightly browned.
- Add chopped red onion and bell pepper to the skillet. Cook for another 5-7 minutes until softened.
- If using, stir in cooked sausage or bacon.
- Make two wells in the hash and crack an egg into each well.
- Cover the skillet and cook for 3-5 minutes, or until the egg whites are set and the yolks are cooked to your preference.
- Season with salt and pepper to taste.
- Serve immediately.
