- 1 cup cooked black beans (rinsed and drained)

- 1/4 cup chopped fresh cilantro
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste

- 2 tablespoons plain Greek yogurt or sour cream (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Prick the sweet potatoes all over with a fork. Bake for 45-60 minutes, or until tender when squeezed.
- While potatoes bake, heat olive oil in a skillet over medium heat. Add onion and cook until soft, about 5 minutes.
- Add garlic, cumin, and chili powder. Cook for 1 minute until fragrant.
- Stir in black beans, corn, and bell pepper. Cook until heated through, about 5 minutes. Remove from heat and mix in cilantro. Season with salt and pepper.
- Carefully slice each baked sweet potato lengthwise down the center, being careful not to cut all the way through. Gently fluff the insides with a fork.
- Spoon the bean and vegetable mixture evenly into the sweet potato halves.
- Top with cheese and a dollop of yogurt or sour cream, if using. Serve immediately.
