- 2 large orange bell peppers
- 1 pound ground beef
- 1/2 cup finely chopped onion
- 1/4 cup finely chopped green bell pepper
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1/4 cup tomato sauce
- 1/4 cup shredded Monterey Jack cheese
- 2 tablespoons olive oil
Instructions
- Cut off the tops of the bell peppers and scoop out the seeds and membranes.
- Carve jack-o’-lantern faces into the peppers.
- In a skillet, brown the ground beef over medium heat. Drain off any excess grease.
- Add the chopped onion, green bell pepper, and minced garlic to the skillet. Cook until softened, about 5 minutes.
- Stir in the salt, black pepper, oregano, and basil.
- Pour in the tomato sauce and bring to a simmer. Cook for 5 minutes.
- Preheat your oven to 375°F (190°C).
- Stuff the bell peppers with the meat mixture.
- Place the stuffed peppers in a baking dish.
- Bake for 30 minutes, or until the peppers are tender and the filling is heated through.
- Top with shredded Monterey Jack cheese and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Notes
- You can substitute ground turkey or chicken for ground beef.
- For a vegetarian option, use cooked rice and black beans as the filling.
