Description

Create fun and festive Jack-o’-Lanterns using stuffed bell peppers. This recipe is perfect for Halloween parties and adds a spooky touch to your meal.


Ingredients

  • 2 large orange bell peppers
  • 1 pound ground beef
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped green bell pepper
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 cup tomato sauce
  • 1/4 cup shredded Monterey Jack cheese
  • 2 tablespoons olive oil


Instructions

  • Cut off the tops of the bell peppers and scoop out the seeds and membranes.
  • Carve jack-o’-lantern faces into the peppers.
  • In a skillet, brown the ground beef over medium heat. Drain off any excess grease.
  • Add the chopped onion, green bell pepper, and minced garlic to the skillet. Cook until softened, about 5 minutes.
  • Stir in the salt, black pepper, oregano, and basil.
  • Pour in the tomato sauce and bring to a simmer. Cook for 5 minutes.
  • Preheat your oven to 375°F (190°C).
  • Stuff the bell peppers with the meat mixture.
  • Place the stuffed peppers in a baking dish.
  • Bake for 30 minutes, or until the peppers are tender and the filling is heated through.
  • Top with shredded Monterey Jack cheese and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

Notes

  • You can substitute ground turkey or chicken for ground beef.
  • For a vegetarian option, use cooked rice and black beans as the filling.
