  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into cubes
  • 3/4 cup cold heavy cream
  • 1/4 cup fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar, for topping
  • Whipped cream, for serving


Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, 1/4 cup sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. Gradually add the cold heavy cream, stirring until just combined. Do not overmix.
  5. Turn the dough out onto a lightly floured surface and gently knead a few times. Pat the dough into a 3/4-inch thick round.
  6. Use a 2 1/2-inch biscuit cutter to cut out biscuits. Place them on the prepared baking sheet.
  7. Bake for 12-15 minutes, or until golden brown.
  8. While the biscuits are baking, gently toss the sliced strawberries with 2 tablespoons of sugar.
  9. Let the biscuits cool slightly. Split them open and fill with the sugared strawberries and whipped cream.

Notes

  • For best results, ensure your butter and cream are very cold.
  • You can add a splash of vanilla extract to the dough for extra flavor.
