  • 1 1/2 teaspoons baking powder

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs

  • 1 cup diced fresh strawberries
  • 1/2 cup fresh blueberries
  • For the Frosting:
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Gently fold in the diced strawberries and blueberries.
  7. Spoon the batter into the prepared cupcake liners, filling each about two-thirds full.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
  10. While the cupcakes are cooling, prepare the frosting. In a cold bowl, beat the heavy cream with an electric mixer until soft peaks form.
  11. Add the powdered sugar and vanilla extract and continue beating until stiff peaks form.
  12. Once the cupcakes are completely cool, frost them with the whipped cream.
  13. Optionally, garnish with extra berries.
